
Josh's Leek Soup Recipe
2 medium Potatoes, cubed
1 Can of Corn
3 Carrots (cut small)
2 cups of chicken broth
1 cup of diced ham (optional)
1 cup leeks onion, chopped
¼ cup of margarine
¼ cup all-purpose flour
3 cups milk
salt and pepper to taste
-In a medium saucepan, combine potatoes, broth, and ham and carrots. Bring to a boil, reduce heat. Cover and simmer for 10 minutes or until potatoes are tender. Potatoes are done when they slide off a fork when poked.
-Meanwhile, in a large saucepan, cook the leeks in hot margarine until tender but not brown. Stir in flour, and salt and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Then pour mixture and corn into broth and potatoes, cook and stir until flavors blend, salt and pepper to taste.
--Now this is my own Leek Soup Recipe, and its my favorite. If you don't like leeks, you can substitute the leeks for one small chopped onion.----
